Why am I not able to submit after my booking has finished?

Nettla only allows score reporting when you have played a public or private match. If your booking type was "court booking", it does not include score reporting or level changes. So if you want to make sure you get to submit a score and have your level change based on that, choose public or private match as booking type when creating the session.
